Grilled Monkfish with Spinach Stems and Carrots
120g monkfish
1 tablespoon jalapeno jelly

150 Chantenay carrots
1 teaspoon honey
½ teaspoon ground coriander

100g spinach stems
1 clove garlic
10g butter
freshly ground black pepper

No recipes to speak of - I just sprayed the monkfish with a little olive oil, seasoned it and grilled it and had it with a little jalapeno jelly and the veggies.
The carrots are steamed and tossed with the honey & coriander.
The spinach is sauteed with the butter, garlic and pepper.
