Lunch Sunday 7 October 2007 - "Chicken" Soup


Soya "Chicken" Soup
5 mls olive oil
1 onion, chopped
2 ribs celery, chopped
2 carrots, chopped
500ml vegetable stock
50g dehydrated soy chunks
1 tsp thyme leaves
handful parsley
30g fettuccine, broken into short lengths
salt & pepper to taste

Saute the onions, celery & carrots in the oil until softened; do not brown.

Add the soy chunks, stock, thyme and simmer, covered, over low heat for 30 minutes. Add the pasta and parsley and cook until pasta is done, about 10 minutes further. Correct seasoning with salt & pepper and serve.

Makes one large serving.
