Lunch Tuesday 2 October 2007 - Black Rice & Salmon Salad


Black Rice & Salmon Salad

50g (dry weight) black Japonica rice
1 pack (115g) hot smoked salmon flakes
3 spring onions, sliced
75 fine beans, cooked
handful fresh parsley, chopped
juice 1 lime
1 teaspoon macadamia nut oil
1 teaspoon honey (about 10g)
Big handful wild rocket (about 45g)

Make a dressing of the oil, lime juice & honey. Season well with salt & pepper.

Toss together the cooked rice, spring onions, fine beans and parsley. Add the dressing and combine gently but thoroughly - don't break up the salmon too much.

Serve on a bed of wild rocket.
